Bad Walter's started as an illegal pandemic operation in someone's living room and became such a cult phenomenon that it was selling hundreds of pints a week before the health department shut it down. Now it's a legit shop in Rockridge, where owner Sydney Arkin and her team make everything from scratch and spin it fresh daily. The whole operation is run by people who actually care about what they're doing: Arkin came from advertising and brings that same creative problem-solving to ice cream, Nolan King leads production, and Julianne Bell handles pastry work. They're cranking out one to two new flavors every week, and they've already hit around 115 different ones since opening.
The flavors are the whole point, and they're genuinely weird in the best way. Arkin grew up eating Fruit Loops for dinner with basically no parental supervision, which explains why she's obsessed with making unexpected things work together. They've done "Sexual Chocolate" with dark chocolate Amarena cherries and marshmallow fluff, plus a Kevin the Rockridge Peacock inspired flavor because why not. Every single thing they make is lactose-free, and they always keep a sorbet and a gluten-free option on rotation too. The lactose-free thing isn't some gimmick either; they use real, regular dairy but process it in a way that makes it actually easier on your stomach than most ice cream.
The kicker is that people apparently eat entire pints in one sitting, which is the highest compliment an ice cream shop can get. You come in expecting to grab a scoop and leave, and instead you're thinking about going back for more before you even finish what's in your hand. It's the kind of place that shouldn't work on paper but absolutely does because someone put real thought into every single thing.
